Nutritionally, chia seeds punch well above their weight: A great source of protein, fibre, antioxidants and an excellent plant based source of omega-3 fatty acids.
⅓ cup frozen raspberries
½ cup coconut milk
2 tsp maple syrup
½ tsp vanilla
1 Tb desiccated coconut
2 Tb chia seeds
Place raspberries in bowl, jar or glass. Mash them up a little bit using a fork.
Add the remaining ingredients. Stir to combine or give the lidded jar a good shake.
Place in fridge to set for at least an hour, preferably overnight.
Before serving, garnish with additional raspberries and coconut if desired.
