Birchia breakfast

A nutritious hybrid of make-ahead breakfats - bircher muesli and chia pudding. 

Measure, mix and leave overnight. All that's left to do in the morning is eat and go!

Serves 2

Ingredients

⅔ cup rolled oats (porridge oats)  

2 Tb chia seeds

¾ tsp cinnamon

⅓ cup blueberries (frozen)

⅓ cup natural kefir or plain yoghurt (unsweetened)

1 cup almond milk (sweetened)  

1 small apple (unpeeled), grated  

Method

Place all ingredients into a medium bowl. Stir until combined. 

Cover and refrigerate for 5 hours minimum or overnight.

To Serve

Divide between 2-3 bowls.

Before serving, thin the consistency down with kefir, milk or yoghurt if needed. 

Garnish with chopped almonds or other nuts or seeds if desired.

Storage

Keep covered in the refrigerator.

Eat within 2 days. 

Substitutions

For dairy free or vegan: Replace the kefir with plant-based milk or yoghurt of choice.


Almond milk: can be substituted with other plant-based milk or cow milk.


I used "So Good'' Original almond milk which is sweetened. If substituted for an unsweetened plant-based milk, add some maple syrup, honey or apple juice to give sweetness.
